Easy, fast and delicious...


It’s not brain surgery, I’ll grant you that - but sometimes figuring out what to make for dinner boggles the mind. It’s not that there aren’t a lot of options out there, it’s just that considering this question 365 days of the year can get a bit tedious, especially when you’re also a busy caregiver.

But since we all have to eat, I thought that over the next few weeks I’d share some of the recipes that I fall back on when I’m not feeling inspired, but still want to make healthy choices. They’re easy, inexpensive and fast. This one’s a staple at our house and it takes all of 15 minutes to prepare. It’s a Canadian Living's™ Best Pasta recipe.

Fresh Tomato and Basil Toss
4 cups diced seeded tomatoes
1/2 cup chopped fresh basil
1/4 cup extra virgin olive oil
1 tsp red wine vinegar
3 cloves garlic, minced
1 tsp salt
1/2 tsp pepper
4 cups rotini or penne
freshly grated Parmesan Cheese

  • In bowl, combine tomatoes, basil, oil, vinegar, garlic, salt and pepper. (Tomato mixture can be covered and set aside for up to 1 hour.)

  • In large pot of boiling water, cook rotini for 8 to 10 minutes or until tender but firm; drain well. Toss with tomato mixture; sprinkle with Parmesan to taste. Makes 4 servings.
